Giardiniera & Jam Stuffed Brie Stuffed Puff Pastry

ingredients
- 12 oz wheel of brie (double or triple cream)
- 1 sheet of thawed puff pastry dough
- 2 tablespoons of Mauro Provisions Mild Craft Giardiniera (drained)
- 2 tablespoons of orange, apricot or fig jam/marmalade
- 1 large egg beaten for egg wash
- 1 cup pecans

Directions
- Put Brie in freezer for 30 min to firm up. Cut in half along equator.
- Preheat oven to 400° F.
- Mix together giardiniera and jam.
- If necessary, cut a couple inches off the side of the puff pastry so it is an even square. Place bottom of brie, skin side down. Scoop giardiniera/jam mix on top of brie.
- Place second half of brie on top, skin side up. Place on puff pastry, Egg wash all over and fold corners in the center, being sure to egg wash any overlapping pieces, pressing to seal.
- Egg wash entire surface and place in a brazier, 12 inch skillet or sheet pan. Bake for 30 minutes or until golden brown. At the 25 minute mark, place pecans all around the brie to toast.
- Let sit for at least 15-20 minutes. Serve with crackers, toast, apple slices, pear slices and of course, those toasted pecans.
