Hashbrown & Giardiniera Frittata

ingredients
- 1 tablespoon butter
- 2 tablespoons Mauro Provisions BBQ Chip Dust
- 2 cups frozen shredded hashbrowns, thawed
- 12 large eggs
- 1 tablespoon salt
- 1 cup Mauro Provisions Medium Craft Giardiniera
- 2 cups shredded cheese of choice (we prefer a provolone/cheddar blend)

Directions
- Preheat the oven to 400 °F.
- In an ovenproof 12-inch nonstick skillet set over medium/low heat add butter. Season butter directly with BBQ Chip Dust. Add hash browns and pat down and compress all along the bottom and up the edges of the pan to form a crust.
- In a bowl, whisk the eggs together and add salt. Gently add the egg mixture to the skillet atop the hash brown crust. Add giardiniera and cheese and use a spatula to press the ingredients into the eggs.
- Place the skillet in the oven and cook until lightly golden on top and puffed up, about 15 minutes.
- Move the frittata under the broiler and cook for an additional 2-4 minutes or until it passes the “jiggle test,” and it is firm and doesn’t jiggle.
- Let the frittata rest for about 5 minutes before slicing. Slide the frittata on a cutting board, cut into wedges and enjoy!
