Smoky Barbecue Chip Dust Pork Chops

Directions
- Preheat a smoker or pellet grill to 225°F. Add desired smoke wood or pellets to smoker or pellet grill and wait until smoke appears. If using a gas grill with indirect heat, keep the heat no higher than 250°F.
- Pat each pork chop with a paper towel making sure to dry the surface well. Season generously on all sides BBQ Chip Dust.
- Place the chops directly on the smoker grates and cook until internal temperature reaches 115° F, about 1 to 2 hours depending on thickness of pork chops.
- Heat a charcoal grill or gas grill to 500 degrees. Place the pork chops on the grill grates to sear, about 1 to 2 minutes per side, until nicely charred and dark brown and the internal temperature reaches 145° F.
- Let rest at least 5 minutes before serving.
