Smoky Pork Chops with Caramelized Onions & Apples

- 4 Mauro Provisions Bone-In Pork Chops
- 3 tablespoons turbinado sugar
- 2 tablespoons kosher salt
- 1 tablespoon cinnamon
- ½ teaspoon cardamom
- ½ teaspoon fresh ground nutmeg
- ¼ teaspoon ground ginger

- 4 tablespoons unsalted butter, divided use
- 4 cups sweet onions, sliced ¼ inch thick
- 4 tablespoons brown sugar, divided use ½ teaspoon salt
- 3 cups Honey Crisp apples, peeled and diced into ½ pieces

- Preheat a smoker or pellet grill to 225°F. Add desired smoke wood or pellets to smoker or pellet grill and wait until smoke appears. If using a gas grill with indirect heat, keep the heat no higher than 250°F.
- Pat each pork chop with a paper towel making sure to dry the surface well. In a medium bowl mix all the dry ingredients together. Season generously on all sides with this spice mixture. Place the chops directly on the smoker grates and cook until internal temperature reaches 115° F, about 1 to 2 hours depending on thickness of pork chops.
- Heat a charcoal grill or gas grill to 500 degrees. Place the pork chops on the grill grates to sear, about 1 to 2 minutes per side, until nicely charred and dark brown, until internal temperature reaches 145° F.
- Let rest at least 5 minutes before serving. Top with the sweet onion apple compote and try to keep the masses away!
Caramelized SweetOnions and Apple Compote
- In a large non-stick skillet over medium heat melt 2 tablespoons butter. Add the onions and stir frequently until translucent, about 10 to 15 minutes. Reduce heat to low. Add 2 tablespoons brown sugar and ½ teaspoon salt, continue cooking until the onions turn golden brown, about 10 more minutes. When onions have reached a beautiful dark brown color, transfer to a bowl or plate.
- In the same skillet, melt the remaining 2 tablespoons butter. Add the apples and remaining 2 tablespoons of brown sugar, stirring occasionally until tender, about 10 minutes. Add onion mixture back to the skillet with the apples and stir to combine.
- Cook until heated through. Serve warm.
